Refreshing Avocado Hummus

Avocado Hummus
The creaminess of the avocado plus the refreshing hint of cilantro, make this treat hard to stop eating.  This recipe is great in wraps and also as a healthy afternoon snack . For a little kick, add a fresh pepper into the mix.
Ingredients
  • 15 oz. can of chickpeas
  • 1 fresh avocado
  • 1 tbsp evoo
  • 1 clove garlic
  • 1 tsp cumin
  • 1/4 cup fresh cilantro
  • Juice of 1 to 2 limes (depending on how juicy they are)
  • Salt and Pepper to taste (optional)
  • 1 Fresh Serrano Pepper (if you want a little spice)
Instructions
  1. Drain and Rinse chickpeas.
  2. Add all ingredients to blender or food chopper and blend until smooth.
  3. Garnish with extra cilantro and serve with your favorite veggies or chips.
